Chicken salad!
Start off with canned chicken, crushed pineapple (drained), chopped celery, and sliced almonds. Add light mayo (or plain Greek yogurt), a sprinkle of salt, a dash of crushed red pepper, and a dust of freshly ground pepper.

Enjoy on a croissant roll or a slice of bread, or couple it with crackers or kettle potato chips.
