Ingredients
- 2 large sweet potatoes
- 4 eggs, beaten
- 12 cherry tomatoes, halved
- ½ cup grated reduced fat cheddar cheese
- 1 ripened avocado, peeled, pitted, and diced
Directions
Preheat oven to 400 degrees F.
Bake the potatoes directly on the oven rack for 50 minutes, piercing with a fork halfway through. Remove from oven and let cool.
